Mixed Vegetable Pulao

Today I wanted to cook rice with all the vegetables that were available in the house. Something fast & easy. So decided to make pulao.


Ingredients: -
1 cup Basmati rice
2 tbsp ghee/butter
2 cloves
2-3 black pepper
1/2 tsp turmeric
1/2 tsp jeera
1/2 tsp Kasoori methi
cashew nuts for garnishing
1/2 tsp ginger-garlic paste
a small cinnamon stick
1 medium sized onion, finely chopped
Chop the following vegetables: -
1 small carrot
2 medium potatoes
1 small capsicum
handful of cabbage
100g beans
few cauliflower florets
50g peas
1 medium sized tomato
Salt

Method: -
1. In a pressure cooker, add 1 tsp of ghee & cook on medium flame.
2. Add cashew nuts & fry them until they turn light brown. Keep them aside.
3. Add the remaining ghee. Add jeera, Cinnamon stick, pepper & cloves. Fry for few seconds.
4. Add chopped onions & turmeric. Fry till the onions start to leave water.
5. Add the vegetables in the same order. First add beans, potatoes, carrots & cauliflower.
6.Add very little salt.
7.Fry them till the edges of the potatoes start to turn brown.
8. Add cabbage, peas & capsicum. Cover the pressure cooker with a plate/lid & let them cook for 2-3 minutes.
9. Add kasoori methi & tomato & mix well.
10. Wash the rice & add it to the vegetable mixture.
11. Add salt per taste & fry rice for few seconds.
12. Add 2 1/2 cups of water & pressure cook till two whistles.
13. Garnish with cashew nuts & serve with pachidi.

Salsa of slumber girls is a nice number. I combed thru all ur recipes to hear the whole song:). We both have same template though mine is not a food blog.
I make pilaf in the same way except that i dont add cabbage and I dont pressure cook it.
