Carrot Payasa

A nice idea to welcome spring! Carrot payasa.

3-4 big carrots
½ lt milk
½ cup Sugar
½ tsp cardamom powder
4-5 strands of saffron
Chopped nuts (cashew nuts, almonds & pistachios)

1. Peel carrots & pressure cook till one whistle.
2. After the carrots are cooled, mash them.
3. Boil Milk & add Carrot paste to it.
4. Let it cook for 5 minutes.
5. Add sugar, cardamom powder & saffron. Stir well.
6. Remove from fire & let it cool.
7. Grind the mixture in a blender or mixer.
8. Serve hot or cold.
