Another tea-time snack. Amma & ajji used to make them in huge amounts during deepavali. I'm making it for Dasara. First time ever handling the chakli varlu in my life & that too after my cervical ribs extraction early this year. Had a hard time pressing the varlu alone, but some how the end result was good.
Ingredients: -
1 cup rice flour
1/4th cup besan
3 tsp red chili powder
1 tsp asafoetida
3 tbsp melted butter/ghee
Salt
Oil to deep fry
Method: -
1. Mix rice flour, besan, salt & chili powder well.
2. Heat ghee / melt butter & add it to the above mixture.
3. Add enough water & knead well. The dough should be prepared in such a way that it easily comes out of the varlu when pressed.
4. Heat oil for frying in a pan.
5. Fill the varlu with the dough & press over the hot oil forming circles or any random shape.
6. After a batch is put into the oil, soak the top part of the varlu in water.
7. Fry ribbons in batches.
