Shavige Payasa

Shavige Payasa, the simplest of all the traditional sweet dishes from Karnataka, is made mostly for all the festivities or important occasions like marriages. Shavige in Kannada is Vermicelli & Payasa means a rice pudding typically made by boiling rice with milk. The payasa is garnished with roasted cashew nuts, almonds, dry grapes or pistachio.

Ingredients: -
1 cup vermicelli
1 cup sugar
2 cups milk
1/4 tsp Cardamom powder
Cashew nuts & dry grapes for garnishing
4-5 strands Saffron
Ghee

Method: -
1. Add 1 tbsp ghee in a pan & roast the cashew nuts till they become slightly brown.
2. Add another tbsp of ghee & roast the vermicelli, till its golden brown on low flame.
3. Add boiled water over the golden brown vermicelli & allow it to cook till it becomes soft.
4.Add sugar & stir well to dissolve it completely.
5.Add milk & keep stirring till the payasa begins to boil & thicken. Use condensed milk for thickness.
6.Add cardamom powder & saffron just before switching off the flame.
7.Garnish with nuts. Serve hot or cold.
